But watermelon is for more than picnics. Did you know watermelon can also be used in a variety of recipes, some of which you may not have considered before?
Putting watermelon balls in a bowl with cantaloupe, pineapple, grapes, kiwi, melon and other fruits to make a fruit salad is too obvious. Let’s investigate some other possibilities.
Try a salsa by tossing together 3 cups diced seedless watermelon, ⅓ cup chopped cilantro, ¼ cup lime juice and ¼ cup diced onion. To kick up the heat, add 1 – 2 minced jalapeno peppers. Serve with tacos, chicken or fish.
For a different kind of salad, combine 6 cups argula (or another green), 2 cups seedless watermelon chunks and 1 cup diced feta cheese in a large bowl. Toss lightly with a low-fat vinaigrette.
You can even make slushies with watermelon. Combine 3 cups diced seedless watermelon, 2 tablespoons lime juice, 1 tablespoon sugar, ½ cup water and 1 cup ice in a blender. Blend until icy. This will make four slushies.
