It was truly a magnificent day in the world of working women – especially those with children - when the slow cooker arrived. Meals could be prepared in advance, then safely cook while they were away at work and be ready to eat shortly after they arrived home.
One of the few downsides to the slow cooker was how difficult it could be to clean it after certain foods had loitered in it all day. Voila – the invention of slow cooker liners. Could it get any better? (Only if someone prepared the ingredients!)
Get some slow cooker liners, then let Karen’s Slow Cooker Chicken Fajitas cook all day while you take care of other things. This recipe will fill 16 (10”) flour tortillas.
2 pounds chicken tenders
1 onion, sliced
1 red bell pepper, cut in strips
¾ cup salsa
1 green bell pepper, cut in strips
¼ teaspoon cayenne pepper
2 packages (1.4 oz each) fajita seasoning mix
16 (10”) flour tortillas
Shredded cheese, chopped tomatoes, guacamole, sour cream
- Line a 5 – 6 ½ quart slow cooker with a slow cook liner, according to package directions
- Place chicken, onion and peppers in slow cooker. Combine salsa, seasoning mix and cayenne pepper. Add to cooker. Cover and cook on low for 6 – 7 hours on low or 3 – 4 hours on high [until chicken is done]
- Carefully remove lid. Stir with plastic or wooden slotted spoon. Spoon ½ cup chicken mixture onto each tortilla
- Let each person add toppings to their individual tastes. Remind them to fold tortilla over filling after toppings have been added
