Recipes: Hillary’s peanut butter cookies

One of the favorite foods/flavors in our family is peanut butter. Just this past weekend, my daughter, granddaughter and I worked together to make cookies that included mini-Reese cups as the toppings as soon as the cookies came out of the oven because Reese cups are a favorite of my son-in-law. At age 4, my granddaughter still isn’t sure why some of the Reese cups aren’t see aside for eating while waiting for the cookies to get done. She may just be on to something!

Next we made two flavors of fudge: chocolate, then peanut butter. Surprisingly enough, the peanut butter fudge is disappearing at a faster rate than the chocolate.

With that in mind, I think my granddaughter and I just might whip up a batch of Hillary’s Peanut Butter Cookies* for the family this weekend. Give them a try, too!

Ingredients:

1 cup sugar

1 cup peanut butter (plain or crunchy, according to your preference)

1 egg

½ cup chocolate chips

Directions:

  1. Preheat oven to 350˚ F.
  2. Mix all ingredients together.
  3. Melt chocolate chips slightly before mixing with the other ingredients.
  4. Drop cookies on ungreased cookie sheet and bake for 10-12 minutes.
  5. Cool on wire rack.
