Move over, pizza – there’s a new sheriff in town, and her name is Ms. Chicken Nugget.
It seems that “chicken nuggets and fries” is an almost automatic response from many children when they are asked what they’d like to eat when their parents stop at a fast food restaurant for lunch or dinner. It’s small wonder that whole pieces of fried or broiled chicken don’t look like real chicken to children who have been born in this millennium.
Occasionally, some parents and children may desire a bit of added flavor in their chicken nuggets, just to change things up a bit One way to accommodate that would be to prepare Herbed Chicken Nuggets, using the recipe noted below, which will yield 30 nuggets.
3 skinless, boneless chicken breasts
1 cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon dried thyme
1 tablespoon dried basil
½ cup butter, melted
- Preheat oven to 400ᵒ F
- Cut chicken breasts into 1 ½ inch-sized pieces
- In a medium bowl, mix together bread crumbs, cheese, salt, thyme & basil. Mix well. Put melted butter in a bowl or dish for dipping.
- Dip chicken pieces into the melted butter first, then coat with the bread crumb mixture.
- Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake for 20 minutes.
