If you are planning a special Valentine's Day dinner at home, here are a few recipes to help you in your planning. Start with a pretty table setting with a red and white theme.
Easy Lasagna
- 4-5 cups of your favorite spaghetti sauce
- 1 lb. ground hamburger or ground turkey
- 1/4 cup chopped onion
- 8 ounces of lasagna noodles
- 1 lb. Ricotta cheese
- 8 oz. shredded Mozzarella cheese
- 1 cup grated Parmesan cheese
Brown meat in skillet with onion. Drain meat and add sauce, mixing well.
In 13x9 baking dish, spread 1 cup of sauce, then cover with layers of lasagna noodles, ricotta cheese, mozzarella cheese, and parmesan cheese.
Push layers down and repeat layers. End with a layer of lasagna and pour remaining sauce over the top. Make sure all lasagna is covered.
Top with additional mozzarella and parmesan cheese. Bake at 350 for 45-55 minutes, until lightly brown and bubbly.
Chicken Divan
- 4 boneless skinless chicken breasts
- 1/3 cup flour
- ground pepper to taste
- 1/3 cup butter
- 1 1/3 cups chicken broth
- 1/2 teaspoon dried basil
- 1 pound fresh broccoli
- 2 tablespoons butter
- 4 ounces sliced fresh mushrooms
- 1 cup sour cream
- 2 tablespoons grated Parmesan cheese
Mix flour and pepper in small baggie and shake chicken to coat. Melt 1/3 cup butter in large skillet over medium heat. Add the chicken, brown on both sides, and remove chicken from skillet.
Add broth to the skillet and cook over low heat for 5 minutes, stirring constantly. Return chicken to the skillet, sprinkle with basil, and simmer covered for 30 minutes. Rinse broccoli and cook in steamer for 10 minutes. Melt 2 tablespoons butter in small skillet, add mushrooms, and saute for 2 minutes.
Arrange broccoli spears in 13x9 baking dish. Add chicken from skillet on top of broccoli, reserving drippings. Spoon mushrooms over chicken.
Blend sour cream into pan drippings in skillet and cook over low heat for several minutes but don't allow to boil. Spoon sauce over chicken and sprinkle with parmesan cheese. Bake for 30 minutes at 350 and broil to brown.
Hot Fudge Pudding Cake
- 1 cup flour
- 3/4 cup granulated sugar
- 2 tablespoons cocoa
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 tablespoons melted shortening
- 1 cup finely chopped nuts, optional
- 1 cup packed brown sugar
- 1/4 cup cocoa
- 1 3/4 cups hot water
Heat oven to 350. Mix flour, granulated sugar, 2 tablespoons cocoa, baking powder, and salt in bowl. Blend in milk and shortening, stir in nuts. Pour into ungreased 9x9 pan. Stir together brown sugar and 1/4 cup cocoa and sprinkle over batter. Pour hot water over batter. Bake 45 minutes and spoon sauce over each serving.
