Mardi Gras season is in full swing. King cakes are being baked and eaten at a blistering pace as they should be. Making a king cake, and hosting a king cake party is an age old tradition that is still very popular today. Here are a few ideas for fillings for your next king cake.

The recipe for making king cake is quite simple, and can be found in my article, Mardi Gras recipe—king cake with blueberry cream cheese filling.

This article will concentrate on various fillings for king cakes. Mind you, the traditional king cake had no filling. It was simply a cinnamon brioche cake which was iced can adorned with colored sugar.

To make this very traditional version, simply add 2T of cinnamon to the brioche ingredients found in the recipe in my article above. Then skip the ingredients and method for the filling.

The method for each of these could not be simpler. Combine the ingredients; spread onto the bottom half of the brioche dough leaving ½" border; cover with the other half of the dough; and roll along the length of the dough.

All of the ingredients for each of the fillings can be found at Piggly Wilggly in Scott.

Apple filling

  • 32oz. Canned apple pie filling
  • 1T Cinnamon

Classic cinnamon pecan filling

  • 2C Pecans (chopped)
  • 16oz Unsalted butter (softened)
  • 1C Sugar
  • 2T Cinnamon

Chocolate filling

  • ½ C Vegetable shortening
  • 8oz. Unsalted butter (softened)
  • 1C Cocoa powder
  • 4C Powdered sugar (sifted)
  • 7T Milk

Cream the butter and shortening. Add the cocoa. Slowly add the powdered sugar 1C at a time until all four cups are incorporated. Add the milk and beat on medium until light and fluffy.

Raspberry cream cheese filling

  • 1lb. Cream cheese (softened)
  • 16oz. Raspberry pie filling
  • 1½C Powdered sugar

Coconut cream cheese filling

  • 1lb. Cream cheese (softened)
  • 16oz. Coconut pie filling
  • 1½C Powdered sugar

These are a few of the many king cake fillings that are possible. Let your imagination run wild. Be bold. After all, it’s just king cake.
