Recipes: Cool Lime Pie Frappé (Video)

One of your best friends has just called to say she really needs to talk. You can tell she is either really angry, super stressed – or both.

You know she’ll feel most comfortable talking while sitting at the kitchen table but have just a few minutes to whip up something cool, light and luscious to help soothe your friend’s frazzle nerves. Let two cool lime pie frappés save the day! You can whip them up in 5 – 10 minutes, add a trace of fiber and 11 grams fiber to her diet and give her the sensation of having a slice of key lime pie with fewer calories (only 213).

Ingredients:

1 pint (2 cups) frozen vanilla yogurt, softened slightly at room temperature

¼ cup low-fat milk

2 Tablespoons fresh lime juice (1 lime)

½ teaspoon freshly grated lime zest (1/2 lime)

2 Tablespoons graham cracker crumbs

Directions:

  1. Puree the frozen yogurt, milk, lime juice and lime zest in a blender until smooth.
  2. Pour into 2 glasses.
  3. Sprinkle each with graham cracker crumbs.
