Recipe: Whole-Wheat Chocolate Zucchini Brownies

Eating a lot of vegetables is hard to do. Luckily we have people like Nestle USA who come up with ways to trick yourself into eating them with this recipe for brownies that have zucchini in them. It may seem like an odd combination, but you cannot even tell you are eating veggies once the brownies are cooked.

This recipe is only slightly different from the original. This one uses regular chocolate chips and a different portion of zucchini because that was what was on hand.

Recipe: Whole-Wheat Chocolate Zucchini Brownies

(Makes 16)

Ingredients for 16 servings:

What You Need:

•1 cup white whole-wheat flour
•1/3 cup baking cocoa
•1 1/4 teaspoons baking soda
•1/2 teaspoon coarse salt
•1 cup chocolate chips
•1/4 cup vegetable oil
•1/2 cup packed light brown sugar
•1/2 cup granulated sugar
•2 large egg whites
•1 teaspoon vanilla extract
•1 large zucchini, grated

What To Do:

1. Heat oven to 350 F

2. Mix all ingredients besides the chocolate chips and zucchini.

3. Melt chocolate chips in microwave in 30 second intervals until smooth. Mix chocolate into batter until everything is evenly distributed. Add in zucchini. Mix until creamy.

4. Bake for 30 minutes. Let cut before cooling.
