From picnics to potlucks and holiday parties, taffy apple salad is a popular pick. This super side dish offers a wonderful blend of sweet and salty, creamy and crunchy. Best of all, it’s easy to make ahead of time in any season.
First, gather these Terrific Taffy Apple Salad ingredients.
- 1 15-ounce can of crushed pineapple
- 1/4 cup white granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tablespoon flour (unsifted)
- 3 large crisp apples
- 1 12-ounce tub of frozen whipped topping (thawed)
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups miniature marshmallows
- 1 cup salted pretzels
Follow these easy instructions to make Terrific Taffy Apple Salad.
Open the can of crushed pineapple. Drain the liquid into a cup or bowl. Set it aside.
In a large saucepan, combine the pineapple juice, egg, sugars, and flour. Stir it constantly with a rubber scraper or wooden spoon over low heat until the mixture thickens, being careful to prevent scorching.
Remove the pan from the heat, and allow the mixture to cool. Cover it, and refrigerate it for at least one hour.
Take the whipped topping out of the freezer, allowing it to thaw.
Wash the apples. Core them, and cut them into bite-sized cubes.
In a large bowl, combine the pineapple mixture with the whipped topping, vanilla extract, and marshmallows. Stir in the cubed apples. Cover the Terrific Taffy Apple Salad tightly, and refrigerate it overnight.
Place the salted pretzels in a zippered plastic bag. Use a wooden spoon to break them into bite-sized pieces. (Do not crush them completely into a powder or crumbles.)
