Tabbouleh is a traditonal Mediterranean dish made with bulgur wheat and lots of fresh herbs and spices. It is simple to make and can be really delicious when made right. The key is to use really fresh ingredients, especially the herbs. The herbs are key to making this dish super tasty.
This is a hearty dish that can be eaten on its own or as a great Mediterranean side dish. It's vegetarian and makes a wonderful salad dish to serve at parties.
Ingredients:
- 1 1/2 cup bulgur wheat (Can be found in the flour, pasta, grains, or ethnic foods aisle in a regular grocery store)
- 2 cloves garlic (pressed)
- 1 cup cucumber (seeded and small dice)
- 2 medium tomatoes (medium dice)
- 1 small onion, preferably red (small dice; ~2/3 cup)
- 3 scallions or green spring onions (chopped)
- 2 cups flat leaf/ Italian parsley (rough chop)
- 1 cup fresh mint leaves (rough chop)
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- *Optional: Good olives, like Kalamata, to serve alongside
Place bulgur wheat in a bowl that can withstand heat (i.e., glass or metal, not plastic). Add boiling water to the bulgur wheat just to cover. Let sit for 30 minutes. (Or follow instructions on package of bulgur wheat).
Drain any remaining liquid from the bulgur wheat and return to bowl. Add the garlic, cucumbers, tomatoes, onion, scallions, parsley, and mint and mix well. Add the olive oil and lemon juice and spices. Mix until well incorporated. The dish is best served if chilled for at least 30 - 45 minutes, but may be served immediately.
