Pumpkin cheesecake can be a hit, but to avoid the heaviness of a cheesecake on an already heavy meal day such as Thanksgiving try a pumpkin cream pie. Pumpkin pie is one of many sweets on Thanksgiving. The endless choices can make the dessert table seem looming. Make bite size pumpkin pies so everybody gets a taste of all of their favorites. To do this, mix up your favorite pumpkin pie recipe and use a small circle cookie cutter to cut out pie dough. Press the circles into the bottom and up the sides of a mini muffin tin. Pour the pumpkin mixture over crust and bake until filling is set. When baking the pies use the temperature your recipe calls for but cut back the baking time. Try baking them for 15 minutes, check the pies for doneness and then check on them every five minutes until done.
Pumpkin pie doesn’t even have to be a pie at all. Make pumpkin pie into cookies or breakfast for an on the go treat. If you have a picky eater child cookies may be a great way to introduce them to pumpkin pie.
