Recipe of the Week: Curried Chicken

This recipe was inspired by Extending the Table by Joetta Handrich Schlabach. The cookbook is available at both Global Gifts locations. This recipe is from Laos, and makes a spicy and juicy chicken. In Laos, it is known as Ping Gai, and is served with rice and hot sauce.

Mix marinade:

3 cloves minced garlic

1/4 teaspoon ground ginger

1/2 teaspoon pepper

2 teaspoons sugar

2 Tablespoons soy sauce

1 teaspoon curry powder

1/2 teaspoon salt

1 Tablespoon fish sauce (you can get this at Saraga in Lafayette Square)

Marinate 1 boneless skinless chicken breast in sauce a minimum of 30 minutes.

Preheat oven to 400. Place chicken on baking sheet and cover with marinade. Bake 10 to 15 minutes. Serve immediately.
