Recipe of the week: Chicken adobo

Quite frankly, this is the best chicken you'll ever eat. This recipe was inspired by Extending the Table by Joetta Handrich Schlabach, and the cookbook is available at both Global Gifts locations. Known as Adobong Manok in the Phillippines, this is sure to please any soy sauce lover!

1 boneless skinless chicken breast

1/2 cup soy sauce

2/3 cup vinegar

2 cloves garlic, crushed

2 bay leaves

1 teaspoon pepper, coarsely ground

Simmer until chicken is tender and sauce is reduced by half--I've found this takes about 30 minutes. Serve with rice.
