These cookies are so good, even my friends who don’t eat “healthy” love them! The best part is they’re made without any refined flours, sweeteners, or dairy products.
Chocolate Chip Cookies
1/3 cup olive oil
½ cup pure maple syrup
1 egg, beaten
1 ¼ cup oat flour (blend 1 ¼ cups rolled oats in a blender)
1 cup rolled oats
½ teaspoon sea salt
1/2 cup chocolate chips
1 teaspoon pure vanilla extract
½ cup chopped walnuts, optional
Mix all ingredients together well. Cover a cookie sheet with parchment paper. Put rounded teaspoonfuls of dough on the sheet, flatten them & bake at 350 degrees for 12 minutes. Cool on pan 4 minutes or until firm.
Makes about 18 cookies
