Here is a simple and well-liked recipe for an appetizer that will make parties and special occasions easy to handle. Using just a few staple kitchen ingredients, you can make bruschetta quickly and enjoy a healthful starter that is not deep-fried or oozing with cheese. This recipe will serve approximately 4-6 people.
- 1/4 cup sweet Italian basil, fresh and sliced into ribbons (chiffonade)
- 1/2 small white onion, minced
- 1/2 small red onion, minced
- 3-4 Roma tomatoes, seeds removed and diced
- 2 cloves garlic, finely minced
- 1/2 lemon, juice only
- 2 tsps balsamic vinegar, dark
- 2 Tbsps extra virgin olive oil
- garlic salt, to taste
- pepper, to taste
- 2 French baguettes, sliced and toasted
- Prepare vegetables (dice, chop, and mince) and place in a bowl.
- Carefully mix together with lemon juice, balsamic vinegar, and olive oil. Tomatoes can lose a lot of juice if you mix together too roughly.
- Season to taste with garlic salt and pepper.
- Slice into baguettes and drizzle slices with olive oil.
- Toast to a crunchy brown.
- Top with bruschetta mix.
