Father's Day is celebrated the third weekend of June across the United States, to remember and honor the contributions that fathers and father figures make in children's lives. This is the day when grills are fired up, all across the nation, as it is tradition to host a barbecue in Dad's honor.

When thinking of barbecuing, a good spice rub makes all the difference. This Father's day weekend, put an Indian twist on your favorite grilled meat with a good Indian spice rub. Here is what you will need:
- 2 tablespoons coriander seeds
- 2 tablespoons cumin seeds
- 1 tablespoon fennel seeds
- 1 tablespoon whole black peppercorns
- 1 teaspoon cardamom
- 1 teaspoon cloves
- 2 - 3 sticks cinnamon
- 1 teaspoon black mustard seeds
- 1 teaspoon turmeric powder
- 3 tablespoons kosher salt
- 2 tablespoons brown sugar
Combine the whole spices in a skillet and gently toast, till the spices turn fragrant. Allow to cool on a plate. Combine the whole spices in a spice blender and grind to a fine powder.
In a metal bowl, combine the ground spices with the salt, sugar and turmeric powder. Mix well. Store in an airtight container.
Sprinkle the spice rub liberally on your favorite steak or chicken, and grill on a barbecue, till done. Allow the meat to rest for 5 minutes under a tent of aluminum foil. Serve with a generous dollop of Tomato chutney, or your favorite relish.
