Recipe for simple lunch sandwich

A simple sandwich using leftover bread, potatoes and eggs can be eaten for lunch or used as a brunch item.

Right now we are in the middle of summer and in need for simple recipes to beat the heat. Here is a simple sandwich recipe which can be prepared using some bread and leftover potatoes and eggs from breakfast. It is simple, filling and can also be substituted for french toast in a brunch. It is similar to bread pakora which is an Indian snack made with bread fried in a chickpea batter. Here is the recipe for bread pakora sandwich.

Bread Pakora sandwich


  • 2 slices bread
  • 1/2 cup mashed potatoes (or any other filling like pao bhaji)
  • 2 eggs (beaten or eggs whites)
  • 1 tbsp canola oil

Take one slice of bread and spread the potato or any other filling on the top. Cover with the second slice of bread. Use a serrated knife to cut the sandwich into half. Heat oil in a shallow pan. Dip one sandwich half in the beaten egg and fry in the hot oil for one minute. Turn over and fry the other side. Drain over paper towels to remove excess oil. Repeat for other sandwich. Serve hot with ketchup.
