This red and green dish not only looks festive, it also tastes delicious. Simple to prepare, it could be a great salad/veggie for a lunch or dinner or it could be the main course with some sliced cheese and warm crusty bread.
I’ve never met a tomato recipe that I didn’t like. And this recipe uses two of my cooking favorites – olive oil and balsamic vinegar.

2 tablespoons The Olive Leaf's Extra Virgin Olive Oil
1 tablespoon The Olive Leaf's Traditional Balsamic Vinegar
1 clove garlic, minced
Sea salt to taste
Fresh cracked pepper to taste
Pinch of sugar to taste
15 stalks of asparagus, cleaned and ends removed, cut into thirds
Cherry tomatoes, cleaned and cut in half
½ tablespoon The Olive Leaf's Extra Virgin Olive Oil
Sea salt and fresh cracked pepper, to taste
Combine all dressing ingredients and mix thoroughly. Preheat oven to 400 degrees. Remove ends of the asparagus spears and cut into thirds at an angle. Cut cherry tomatoes in half. Coat baking dish with olive oil; add asparagus, tomatoes, salt and pepper to taste, and olive oil. Roast in oven for 5-7 minutes or until asparagus are just fork tender. Remove from oven then pour the (well-mixed) dressing over the asparagus and tomatoes - mix gently and serve.
