Ingredients: One 3 pound pumpkin (peeled and cut into 1-inch cubes), 3 Granny Smith apples, 2 tablespoons sugar, ½ salt, and 4 tablespoons cold butter (cut into small pieces); optional ( a cup of pecan pieces) and a greased baking pan.
Preparation: Preheat the oven to 350 degrees F. Begin with washing the outside of the pumpkin. Then remove the top quarter of the pumpkin. Scrape out the fiber and seeds, discarding fiber and reserving the seeds for toasting if desired. Then cut lengthwise into 8 wedges. Remove the peel with a vegetable peeler. Cut pumpkin into 1-inch cubes.
Next, cut the apples into 1-inch cubes. One does not need to peel them. Then, combine the pumpkin and apple cubes with sugar and salt and toss to combine. Put the mixture into the baking dish. Put pieces of butter and pecans (optional) on top. Cook for about forty minutes or longer as needed.
