Recipe for no oil Fiesta chicken

Fiesta means party in english. Houston is all about great parties and celebration. Parties means lot of people, music, entertainment and great food. Great is enough on its own to create vibrant environment in any party. Mexican food tops the chart of good party foods. But might not be a great choice for health and weight concious people. It is a waste of time to calculate the calorie content of the food while one is in a party. So it is everybody's responsibility to make sure that they feed their guests the best and the healthiest food.

Fiesta chicken is very colorful, tangy, spicy and the best part is, it is cooked without a single drop of oil! It is a delicious tomato flavored chicken which can be served with contrasting white and green rice.

Ingredients:

1 whole chicken (skinless), approximately 2 lbs, cut into mediem size pieces

5 large tomatoes, pureed in a mixer

6 cloves of garlic, chopped

2 tablespoons of raisins

1 1/2 tablespoons of dried oregano

1 1/2 tablespoons of red chilli powder (this will add color)

3/4 tablespoons of powdered sugar

A pinch of orange food color

4-5 spring onions chopped

1/2 cup of onions, chopped

2 tablespoons of corn flour

1 1/2 cup of boiled white rice

1/2 cup of fresh coriander and parsley leaves, chopped

Method:

1) Heat a non stick pan and add the tomato puree to it. Then add the chopped garlic, raisins, onions, spring onions and all the seasonings. Boil it for 1 minute.

2) Add the chicken pieces to the boiling gravy and cook till it is tender.

3) Dissolve the corn flour in 3 tablespoons of water.

4) Add the corn flour mixture to the chicken and cook it till it thickens.

5) Boil white rice in water  and drain out the excess water. This removes the starch.

6) Toss the boled rice with chopped coriander and parsley leaves.

7) Serve the chicken with the rice in a serving plate and let the fiesta begin!
