I have been known to judge a restaurant by its potatoes. After all, any place that can’t cook potatoes well probably doesn’t do justice to its other dishes. That’s my opinion.
So I have become a bit of a potato connoisseur. I’m always on the lookout for delicious recipes to prepare my favorite side dish. This recipe is a quick and easy way to prepare some tasty spuds.
The recipe also can be prepared ahead of time for grilling at a get together. I haven’t tried it yet but I think these might be good in campfire coals.
Courtesy of The Olive Leaf in Bloomington, Indiana, the potato recipe is one of many that the shop shares. Watch for when owners Troy and Marla Kirkman host one of their popular tastings where they serve goodies made with the products they sell. Or stop by the shop any time for a complimentary oil and vinegar tasting.
Grilled Pesto Potatoes
2 cups fresh basil leaves
½ cup freshly grated Parmesan-Reggiano Cheese
½ cup The Olive Leaf's Basil Infused Olive Oil
¼ cup pine nuts
2 garlic cloves, minced
Salt and freshly ground black pepper to taste
5 red potatoes, washed and cut into cubes
Combine basil, garlic, and pine nuts in a food processor or blender and pulse until coarsely chopped. With the machine running, slowly add the olive oil and process until smooth. Add the cheese and pulse until combined. Season with salt and pepper to taste.
In medium bowl, combine potatoes and pesto. Mix until potatoes are well covered. Spray a large piece of aluminum foil with cooking spray. Add the potatoes and wrap in a foil packet. Wrap another piece of foil around the packet so it is sturdy enough to grill.
Preheat the grill to medium-high heat. Place the potato packet on the grill. Cook for 15 minutes and then flip the packet. Cook for an additional 15 minutes or until potatoes are tender and slightly crisp. Carefully remove the potatoes from the packet and serve warm.
