Ah, Hoosier summertime! Fresh veggies straight from the garden or the farmers’ market. So good and so good for you.
Sometimes, the simpler the recipe, the better. These Cirtus Green Beans are very easy to prepare and scrumptious.
When I was a child, we always had green beans cooked with bacon grease or ham hocks, layered with potatoes and maybe a few onions. The beans would often be cooked to mush. I thought they were delicious. Until I grew up and discovererd barely cooked vegetables – without the grease.
Glad I got to savor them both ways but this recipe from The Olive Leaf in Bloomington, Indiana, is one I now prefer.
Try it and see what you think. Even the bright green color of the beans is appetizing.
Citrus Green Beans
¾ pound fresh green beans, trimmed
4 tablespoons The Olive Leaf’s Lemon Infused Olive Oil
(Blood Orange or Persian Lime Olive Oil can be substituted)
Pepper to taste
Sea salt to taste
Place green beans in steamer basket; place in a large saucepan over 1 inch of water. Bring to a boil. Cover and steam for 8-10 minutes or until crisp-tender. Transfer beans to a small bowl. Add oil, salt and pepper; toss to coat.
