Recipe: Capitol City Brewing's Prohibition Porter chicken pizza


  Food will be a big part of the 2009 Great American Beer Festival.
  Whether you can make it to the festival or not, try making a
  Capitol City Brewing Co. inspired chicken pizza.

The Great American Beer Festival is being held in Colorado from September 24-26, 2009.  Several local breweries will be participating in this nationwide celebration.  Two DC breweries will be participating: Capitol City Brewing Company and the District Chophouse.  The festival represents the breweries' chance to offer public tastings and compete in the nation's largest beer competition.

Capitol City Beer Chicken Pizza is inspired by one of the unique beers that will be appearing at the festival.

Ingredients:

2lbs boneless, skinless chicken breast

12oz Capitol City Brewing Company Prohibition Porter

Italian dressing:

3/4 cup mayonnaise

1 tablespoon red wine vinegar

1 tablespoon lemon juice

1 tablespoon vegetable oil

1 tablespoon water

1 teaspoon Worcestershire sauce

1/2 teaspoon dried oregano

1 teaspoon white sugar

1 clove garlic, chopped

one precooked pizza dough

1/4 cup tomato sauce

Italian seasoning

1/2 cup roasted red peppers, chopped

1/2 cup mushrooms, sliced

1 cup shredded mozzarella cheese

Place chicken breast in a large plastic freezer bag.  Combine dressing ingredients and whisk together to create a creamy Italian dressing.  Pour dressing and beer into freezer bag over chicken, seal and marinate in refrigerator for 24 hours. 

Remove chicken from marinade and cook on grill or stove top until completely cooked through.  Set aside to cool.  Preheat oven to 350.  Top pizza crust with tomato sauce, Italian seasoning, peppers and mushrooms.  Slice chicken breast and add to pizza.  Top with cheese and place in the oven until the cheese is melted and the pizza is warmed through, approximately 10-15 minutes.

Remove from oven, slice, and enjoy!
