Basic Vegetarian Chili with a chunk of Colby Jack Cheese
By Samantha Marquis

Chili is the perfect answer to cold weather.

Though it can come in many forms, sometimes a bowl of basic chili is best. Then you can dress it up the way you want.

You can find all these delicious ingredients at Henry's Farmer's Market right here in Burbank!

Ingredients

1 pkg. Quorn Grounds

1 medium organic onion, chopped (1/2 cup)

2 cloves garlic, finely chopped

1 can (14.5 oz) organic diced tomatoes, undrained

1 can (8 oz) organic tomato sauce

1 Tbsp. organic chili powder

3/4 tsp. organic ground cumin

1 tsp. organic smoked paprika

1/4 tsp. salt

1 can organic kidney beans, drained and rinsed

Mix it up!

1.  In 3 quart saucepan cook onion and garlic on medium heat until onion starts to become clear. Add Grounds and cook until heated through. Stir in all other ingredients EXCEPT beans.

2.  Heat to a boil then reduce heat and cover. Simmer for 1 hour, stirring occasionally.

3.  Add beans and stir. Heat to boiling, reduce heat and let simmer uncovered for ten minutes.

Ready to Serve!

Here are some savory suggestions on how to serve your chili:

Straightforward: Pour a nice ladle of chili over a fresh slice of cornbread.

Creamy: Add shredded organic shredded cheese and a dollop of organic sour cream.

Cheesy Starchy Goodness : Add a pile of shredded cheese and a handful of organic whole wheat oyster crackers.
