Having a lot of spices in the cabinet is not always a bad thing as long as they are refreshed often. With Memorial Day coming up and any other barbecue-loving occasion, it is helpful to have different marinades and dry rubs in your back pocket to make for the various meats you'll go through. This light rub flavors chicken and other lean meats well with copious amounts of herbs and spices. There is a salty spiciness to it that gives a good kick. The recipe makes approximately 2/3 cups of rub.
- 2 Tbsp parsley, dried
- 1 1/2 Tbsp onion powder
- 1 Tbsp paprika
- 1 1/2 tsp coriander, ground
- 1 tsp sea salt
- 1 tsp rubbed sage
- 1 tsp thyme, dried
- 1 tsp black pepper, freshly ground
- 1 tsp celery seed
- 1 tsp oregano, dried
- 1/2 tsp cayenne pepper, ground
- Combine all ingredients.
- Pat onto meat of choice.
- Cook by grilling or roasting for appropriate duration of time (varies by meat).
