Recipe: Baked Zucchini "Fries"

Who says dessert has to be chocolate?

I found these beautiful zucchini fries on a Tumblr blog called Damn Delicious & knew right away that I was going to need to try them. They were so simple to make. You just slice zucchini, dip it in flour, eggs, and breadcrumbs, and then bake for a few minutes.

I did however have a serious problem with the egg getting the breadcrumbs too mushy to stick to anything, which is why mine look more naked than the originals. Never fear though, as they were just as delicious only lightly breaded.

Recipe: Baked Zucchini Fries

What You Need:

■2 zucchini
■1/2 cup all-purpose flour
■1 large egg, beaten
■1 cup plain bread crumbs

What To Do:

1. Preheat oven to 400 F

2. With the skins still on, slice zucchini into small sticks, resembling fast-food french fries.

3. Dip each stick in flour, then egg, then breadcrumbs.

4. Place sticks on cookie sheet.

5. Bake 20 minutes.

Serve with ranch dressing or this Garlic Chipotle Aioli
