"Raw" is in. Salted caramel is definitely in. Why not combine the two in an easy, delicious dip for green apples, strawberries, and every fruit in between? You'll find this recipe in different forms depending on where you look, but here's an easy go-to for even the pickiest eaters. (This recipe is for two; double for a party crowd.)
Raw Salted Caramel Dip
1/2 cup raw, unsalted cashews
1/2 cup pitted Medjool dates
splash of real maple syrup
1/2 teaspoon vanilla extract
1/4 - 1/2 teaspoon sea salt
Boil some water, and pour over cashews to soak for 30 minutes. Keep water hot to soak dates for the last 5 minutes. Drain cashews and dates, reserving the date water. Pulse everything together in a blender or Vitamix, adding date water as needed to desired consistency. Taste as you blend, adding more syrup or salt if needed.
Refrigerate for 2+ hours, sprinkle with sea salt, and serve.
