In a couple of weeks or so, fall will be here. It’s my favorite season of the year, perhaps in part because I always looked forward to the start of school when I was a child. I liked school anyway, but to add to that, my dad used to take us out to buy our school supplies. For some reason, enjoying an outing with my dad and getting to pick out my own school supplies made going back to school again so much more fun, and I was full of anticipation for what the new school year would bring.
Fall is also exciting because it’s the start of the holiday season and the advent of some of the most delicious fruits and vegetables of the year. Apples, squashes, and pomegranates are just a few of them. There are endless ways to prepare apples, and even when there’s no time to do anything special with them, a crisp, juicy apple is a treat all by itself.
I do like dessert, though, and apples lend themselves so nicely to dessert. Here’s a recipe for raw caramel you can enjoy either with plain apple slices or on top of something fancier, like raw apple crisp. Raw caramel offers a lot of yummy possibilities. Serve it on raw ice cream, put a little in your banana smoothie, or drizzle it on raw brownies, as Joy suggests. Even eat it right out of the spoon. I’m betting that no one will ever guess it’s raw.
