I like to call these "clean out the refrigerator" pancakes. I had half of a can of evaporated milk that I really wanted to use up, so I did a quick Pinterest search for pancake recipes with evaporated milk and found The Pioneer Woman's Lemon Blueberry pancakes. I didn't have a lemon or blueberries, but I did have some clementine oranges and raspberries, so I decided to give it a try.

These pancakes turned out great and were very fluffy. They were sweeter than the normal pancake recipe I make. I'm not sure if that was from the evaporated milk or the sugar that is added to the batter. Either way, they were a nice change of pace from my old stand by recipe.

Raspberry Orange Pancakes (recipe adapted from The Pioneer Woman)
1 1/2 cups flour
1/4 tsp salt
1 tbsp baking powder
3 tbsp sugar
1 1/2 cups evaporated milk
1 orange (zested and juiced)
1 egg
1 1/2 tsp vanilla
2 tbsp butter (melted)
1 cup raspberries

Combine flour, salt, baking powder and sugar.

In a separate bowl, combine evaporated milk, orange zest and juice, and vanilla. Crack in the egg.

Add the wet mixture to the dry and combine with a fork. Fold in the raspberries. Cook on a skillet and serve hot with butter and maple syrup.
