Rancho Liborio: Bargains, quality and the materials to make a fresh cucumber salad


Great produce offerings from Rancho LIborio Mexican Market.

The Rancho LIborio Mexican Market is a little market, actually it is quite large, that kind of snuk up on me. Having worked with many Hispanics over the years, I have grown accustomed to certain foods prepared as authentic as possible. In this economy, however, It has become so much easier for me to buy products and make meals for the family in large batches.

Rather than waste money on fast food that is less than stellar, I began a search for "ethnic" markets. In many of these markets, such as Rancho Liborio, the produce os better than I many of the traditional stores in the area. The meat is far fresher, and caters to my "discernably different" pallette.

They tend to have weekly bargains on one of my favorite staples, cucmbers. For my money, they are easily four to five times larger than anywhere else I have been and always half the price. Find yourself a few to make this great cucumber salad

Cucumber salad

  • Two Large or Three small cucumbers
  • One large white onion
  • 1 cup Miracle Whip
  • 3/4 cup sugar
  • 1/2 cup milk (2%)
  • 3 Tbls Sour Cream
  • salt and pepper

Begin by preparing the cucumbers into either dices or slices, do the same for your onion, keeping in mind that the smaller the onion the stronger the flavor. (note: in order to keep the onion from gassing you out, place your knife in cold water and keep your mouth open to breathe.)

Make a sauce from the remaining ingredients in a separate bowl. Set that aside and salt and pepper the onion cucumber mix.. Place together cover and put in the fridge for at least an hour. ENJOY!!!!
