Did you grow any potatoes or peppers in your garden this year? Do you have "Eyes are bigger than your garden" syndrome? Maybe you were, um, overzealous in your planting of said vegetables?
Then you might be interested in this recipe: it uses those bales of vegetables that might otherwise wind up in the compost heap.
You will need:
Italian Sausages (hot or mild or a mixture of both)
Chicken-boneless, skinless (thighs or breasts or-you guessed it-a mixture of both)
Peppers (Bell or Italian Frying or whatever you grew that is still edible)
Potatoes (red or blue or white or a mixture)
An onion or 2
A garlic clove or 2 or 3
Salt and pepper to taste
Crushed basil if you want it, as much as you want
Cut up all the meat so that the chunks are all about the same size. Using kitchen shears makes quick work of it.
Cut vegetables up into chunks about the same size as the meat. Mix it all together. Drizzle olive oil over it all. Throw in the garlic cloves. Roast on a baking sheet or in a 9x13 pyrex dish at 400 degrees for an hour or so, stirring it all around occasionally, eyeballing it for doneness.
