Weeknights can be busy nights for most families. Most families do not have the time to spend a lot of time cooking dinner when they have soccer practice, piano and ballet lessons for kids on week days. Quick, one pot recipes are a great savior for such occasions. You put all you ingredients in one pot and you have dinner ready without much stress. Here is the recipe for a simple pasta dish with winter vegetables and chicken.

One pot pasta with winter vegetables


  • 1 package rotini pasta
  • 1 cup frozen mixed vegetables
  • 1 medium onion (diced)
  • 1 tsp minced garlic
  • 1 cup diced grilled chicken (frozen)
  • 2 cups tomato basil pasta sauce
  • 1 tbsp olive oil
  • 1 tsp rosemary
  • 1 tsp basil
  • 2 tsp salt
  • ½ cup grated cheddar cheese
  • ¼ cup grated parmesan cheese
  • 4 cups water

Boil the water in a stock pot with 1 tsp salt. Boil the pasta in the hot water for 15 minutes till au dentate. Drain the pasta and keep it aside. Put the stock pot back on the stovetop. Add olive oil and the diced onion. Fry the onion in the oil. Add garlic and fry for 1 minute. Now add the frozen mixed vegetables and the chicken. Fry till vegetables are cooked and chicken is tender. Add pasta sauce, salt, rosemary and basil in the sauce. Add the pasta back into the pot. Add the cheddar cheese and heat till the cheese melts. Take off the stove and pour the pasta on a serving bowl. Garnish with grated parmesan cheese before serving.
