Today’s recipe feature is Quick Mediterranean Salad. With just five ingredients, you will create this delicious, elegant salad and you go from prep to table in just 10 minutes. Great as a starter, add grilled chicken, shrimp or fish to this dish to create a wonderful light meal. There is also a bonus recipe shown below for Sundried Tomato Vinaigrette. Quick Mediterranean Salad (Recipe courtesy Robyn Stone)
- 4 cups salad greens
- 2 medium tomatoes, chopped
- 3 medium cucumber, chopped
- ½ red or purple onion, sliced
- 8 ounces Feta cheese
- Sundried Tomato Vinaigrette
Layer salad greens, tomatoes, cucumber, onion, and feta cheese onto medium serving platter or in a medium bowl.
Serve Sundried Tomato Vinaigrette on the side for self-serving. Serving yield = 4 to 6 servings.
