I have become addicted to Kale and use it more than lettuce or add it to mix up the taste of my salads. Here is one in many of my versions of Kale salads which is simple and quick to prepare.
-Kale-2-3 bundles (or more depending on how small or large salad needed).
-Tomatoes (cherry or any variety) sliced or diced.
-1 Red onion (small-medium) sliced.
-1-2 Tablespoons Olive oil (extra virgin)
-1 Tablespoon Italian seasoning (McCormick Gourmet Herbs or any brand)
-1 clove garlic (crushed)
-Sea salt (add according to taste)
-Juice from 1 small lemon.
*decrease or increase (olive oil, Italian seasoning, garlic, salt and lemon juice) depending on your taste and size of salad that you will prepare.
Kale -Pick leaves from stems, clean thoroughly in tepid to warm water, dry and cut into desired pieces.
-In a large bowl add kale.
-Next add olive oil, Italian seasoning, garlic, sea salt, juice from a lemon.
-Next add tomatoes and onions and toss well.
Optional: you can add a variety of fresh and colorful vegetable to this salad, let your imagination run wild.
