Zucchini is actually a summer squash. The freshest zucchini can always be found at farmers markets in season. This great dark green vegetable that resembles a cucumber is always available in supermarkets year round. Even though we think of zucchini as a vegetable it is actually a flower which is low in calories, high in folate, potassium, manganese and vitamin A. Quick frying zucchini whether sliced or shredded makes a pretty presentation when served. Delicious, nutritious and very easy to prepare. This dish is versatile in how it can be served.
Ingredients:
- 6 small zucchini (sliced thin or shredded)
- 4 cloves of garlic, minced
- ¼ of a Vidalia onion
- 3 tablespoons of olive oil
- ½ tablespoon of chopped parsley
- ¼ teaspoon of oregano
- ½ teaspoon of salt
- ¼ teaspoon of pepper
Directions:
- In a large frying pan heat the oil until hot.
- Add enough zucchini to cover the bottom of the pan.
- Cook zucchini over a medium heat until lightly golden brown on both sides.
- It should take about 10-15 minutes to sauté.
- Once all the zucchini is cooked transfer to a platter.
- While the frying pan is still hot add the onion and garlic and sauté until translucent.
- Add the spices to the frying pan and stir into the garlic and onion.
- Transfer all the zucchini into the pan and gently toss.
- Cook for an additional 2-3 minutes before transferring to a serving platter.
- Enjoy!
Suggestions:
- A delicious side dish straight from the pan to accompany any meal.
- Place a few slices over some toasted French or Italian sliced bread for a vegetable bruschetta.
- Mix the hot zucchini with some baby spinach leaves to get the most nutrition from your vegetable dish.
- Instead of breaded pork chops or chicken cutlets, serve them grilled topped with the fried zucchini and dinner will be a hit.
- Add a ½ a cup of marinara sauce to the zucchini to add more flavor and color to the dinner plate.
