This quick, easy microwave recipe was inspired by this recipe on PopSugar Fitness – the original is a vegan recipe, but I substituted what I had in my pantry and it came out wonderfully. Banana bread in less than five minutes – a great treat any time of the year.
Single-serving banana bread (adapted from PopSugar Fitness):
· 1/2 banana
· 2 tablespoons flour
· 1 tablespoon sugar
· 1/8 teaspoon baking powder
· 1/8 teaspoon cinnamon
· 1/4 teaspoon vanilla extract
· 1/2 teaspoon vegetable oil
Mash banana in a small bowl. Add remaining ingredients to the banana and mix well until a smooth batter forms.
Spray a ramekin with cooking spray and pour in batter, Microwave for 70 to 90 seconds on high, until batter is dry (watch carefully – overcooking will turn the bread tough and chewy).
Remove from microwave (ramekin will be hot), cool for one minute and enjoy!
