Quick, easy, yummy gluten-free chocolate chip cookies

The hustle and bustle of the holidays is upon us. What do you do when you forgot the company Christmas potluck was tomorrow, or guests unexpectedly drop by your home? You have to prepare a quick treat--and many gluten-free baked goods aren't always quick and convenient to make. Enter the Immaculate Baking Company, whose gluten-free chocolate chip cookies are scrumptious and incredibly easy to whip up.

The Immaculate Baking Company's chocolate chip cookie dough can be found in the refrigerated section of the grocery store (I found mine at Wegmans in King of Prussia), and all you have to do to prepare it is preheat your oven to 325 degrees, open the package, place the 12 cookie dough squares 2" apart on an ungreased baking sheet, and then bake them for 16-18 minutes. After you take them out and let them cool for 5 minutes, you've got a whole batch of chocolate chip, gluten-free deliciousness.

These cookies couldn't be easier to prepare, and they're really tasty, too. I've even given them out to non-gluten-free friends, who have loved them just as much as I do. They're soft and chewy, unlike other gluten-free cookies that are too crunchy or crumbly. They're also not small--one cookie is definitely enough to satisfy. They taste great still warm from the oven, packed in a lunch, or as a late-night snack. Just don't pig out on the entire batch--one serving size is one cookie, and each cookie is 150 calories. Sure, it's 150 calories of pure awesomeness, but still--don't go overboard (although you'll surely be tempted to).

The Immaculate Baking Company's gluten-free chocolate chip cookie dough is also dairy-free, so it's safe for anyone who's lactose-intolerant in addition to being gluten-intolerant. And even better, it's inexpensive for gluten-free food--it retails at Wegmans for about $2.99. (Important note: The Immaculate Baking Company also makes cookie dough that is NOT gluten-free. Before you buy the cookie dough, make sure you've picked up the gluten-free version!)

I recommend picking up a few packages of the Immaculate Baking Company's chocolate chip cookie dough to keep on hand in your fridge--they'll be a lifesaver during the busy holiday season, and are perfect for bringing to get-togethers or just making for yourself as a much-deserved treat!
