This is an easy and quick meal to prepare on a weeknight. Since the smoked sausage is already cooked, just need to brown the sausage and cook the vegetables and apples. Serve with cooked rice or noodles, side salad and crusty roll.
Smoked Sausage with Apples
- 3 T. olive oil
- 1 pkg. of smoked sausage link
- 1 medium size onion (thinly sliced)
- 1 green pepper (chopped)
- 2 or 3 apples (peeled, cored & sliced)
- 1 T. lemon juice
- 1 c. chicken broth
- 1 tsp. black pepper
- 1/2 tsp. red pepper flakes
- Cooked rice or noodles
Slice sausage link into large chunks. In large skillet sauté sausage links with onion, green pepper and apples until vegetables and apples are just tender.
Add lemon juice, chicken broth, black pepper and red pepper flakes. Simmer on low for 10-15 minutes or until liquid is almost absorbed.
