Whether you’re looking for a quick after-school snack for the kids or a kid-friendly (and parent-friendly!) appetizer for an upcoming party, these Grilled Cheese Bites, adapted from The Smart Cookie Cook, fit the bill. They combine two cheeses, canned biscuits and butter for some color and added flavor – that’s right, just four ingredients, and less than 20 minutes of your time.
Grilled Cheese Bites (adapted from The Smart Cookie Cook):
· 1 can buttermilk biscuits (like Pillsbury), 10 biscuits per can
· 4 ounces Velveeta
· 4 ounces cheddar, mozzarella or other “melty” cheese
· 1/4 stick butter, melted
Preheat the oven according to the directions on the can. Prepare baking sheet with foil or parchment paper.
Take each biscuit and flatten out so that a small cube (approximately 1/2”) of each type of cheese will fit on the dough, leaving enough room around the sides to fold the dough up around the cheeses. “Seal” the dough pocket and place seams up on the baking sheet.
Brush the bites with the melted butter and bake for 10 minutes, or until golden brown.
Serving suggestions: tomato sauce or tomato soup.
