Buckeyes – combining two favorite flavors, peanut butter and chocolate – take on a new twist when they turn into a Chex Mix. This easy recipe, adapted from Betty Crocker, takes just six ingredients and can be prepared in a big batch in less than 30 minutes – a great snack for the big game coming up.
Buckeye Chex Mix (adapted from Betty Crocker):
· 6 cups Chocolate Chex cereal
· 1 cup peanuts
· 1/2 cup peanut butter
· 1/4 cup brown sugar
· 1 tablespoon butter
· 1 8-oz. package unwrapped mini peanut butter cups
Line a baking sheet with wax or parchment paper.
Combine cereal and nuts in a microwaveable bowl and set aside. In a small microwaveable bowl, microwave peanut butter, brown sugar and butter on high for 1 minute, stirring afterward. Microwave for another 30 seconds to 1 minute until the mixture is boiling, stirring after removing from microwave. Pour over cereal mixture and stir until coated evenly.
Microwave mix on high for 3 minutes, stirring mixture every minute. Spread on baking sheet and refrigerate for 5 minutes, until cool. Mix in mini peanut butter cups and serve, or store in an airtight container.
