Quick and simple snack, stuffed banana peppers

It’s the time of year when everyone is busy in the Pittsburgh Area.  With the kids playing football on Friday nights and Saturday morning, your favorite college team playing Saturday afternoon and then the Steelers on Sunday who has a ton of extra time to spend in the kitchen?  This recipe for Stuffed Banana Peppers is quick, easy and also fairly inexpensive (especially if you grow the peppers in your garden!)

What you will need:
 
  • Banana Peppers (as many as you would like to make, it also depends on how full you intend to stuff them)
  • 6oz of softened cream cheese
  • 6oz of shredded Cheddar Cheese
  • 1 cup of salsa
 
Slice the Banana Peppers in half, lengthwise then mix the cream cheese, Cheddar Cheese and salsa together.  Take your cheese and salsa mixture and stuff your pepper halves!
 
Depending on how many peppers you decided to stuff, grab a pan that is a good size, spray the pan lightly with a cooking spray so your peppers don’t stick and bake them for about 20 minutes at 350 degrees.

Remember this snack is only as spicy as the salsa you decide to use.  For a really hot and spicy version use Jalapeno peppers instead of the Banana Peppers.
