Years ago cottage cheese was a favorite food if you were on a diet. The low-fat and fat-free version is still good to include in your diet, whether you need to lose weight or just to enjoy. Cottage cheese is high in calcium and can be eaten with pineapple, peaches, cantaloupe, strawberries and other fruits. Mashed cottage cheese can be used in place of ricotta cheese when preparing lasagna and manicotti.
The Cottage Cheese Salad recipe below is a light and refreshing salad. Other vegetables added can include raw zucchini, squash and broccoli.
Cottage Cheese Salad
Ingredients
3 to 4 c. cottage cheese (low-fat)
1/4 c. green pepper (diced)
1/4 c. red pepper (diced)
1/4 c. red onion (diced)
1/4 c. carrots (diced or shredded)
1/4 c. cucumbers (diced)
2 tomatoes (chopped)
1/2 c. black olives (drained, pitted and sliced)
Romaine lettuce leaves
Lemon pepper
Directions
In large bowl mix together all ingredients except lettuce and lemon pepper. Lay lettuce leaves on salad plates, scoop cottage cheese mixture onto lettuce. Sprinkle with lemon pepper. Serves 2 to 3.
