Pumpkin Whoopie Pies, another great thing to do with your fresh, local pumpkin. Check out my article on my blog, Beast's Kitchen. The recipe comes from King Arthur Flour, and is a treat for kids of all ages. The spices and pumpkin will definitely make you feel like fall. These would be a great treat for a halloween gathering. Just be sure to purchase pie pumpkins because they are much sweeter than other pumpkin. If you've heard about the "pumpkin shortage" at the grocery store, never fear, there's plenty of pie pumpkins at the farmer's market, and cheap. Last week I found some 2 for $1, and one was just perfect for this recipe. Give it a try, and while you're at it, think of some other recipes you could make with the pureed pumpkin to use the second one...maybe pumpkin muffins, or cookies...smoothies or pumpkin ice cream.
