These pumpkin cheesecake bars are amazing – simply amazing! They are oh-so-easy to make and you will be the hit of every party you bring them to. Better make extra just to keep at home, as they won’t last long.
The crust for these is made from a pound cake mix. The flavor of the pound cake adds so much that they are truly best if you don’t try to substitute any other type of cake mix. The filling of these yummy bars is so good, however, that you could put it on any crust and it would be fantastic!
Make sure you use sweetened condensed milk (not evaporated milk). It’s easy to get the two kinds mixed up, but the sweetened condensed is a thicker, sweeter canned milk and is perfect for this recipe.
Although there are no claims made that this is a healthy recipe, it’s hard to not take a minute to think about how good pumpkin is for you. It’s such a great source of Vitamins A and C, potassium, fiber and minerals. Knowing that pumpkin is so good for you will help offset some of the calories that may be lurking in these amazing bars! Make sure you purchase a can of solid pack pumpkin, not pumpkin pie filling – there is a big difference.
Pumpkin Cheesecake Bar Recipe
Ingredients for Pumpkin Cheesecake Bars:
- 1 package pound cake mix, unprepared
- 3 eggs, divided
- 2 tablespoons butter, melted
- 4 tsp. pumpkin pie spice, divided
- 8-oz. package cream cheese, softened
- 14-oz. can sweetened condensed milk
- 15-oz. can solid pack pumpkin
- ½ tsp. salt
Directions for making Pumpkin Cheesecake Bars:
Preheat the oven to 350 degrees.
In large bowl, combine the dry pound cake mix, 1 of the eggs, butter, and 2 tsp. pumpkin pie spice; stir until crumbly. Press into the bottom of a jellyroll pan (10x15).
In large bowl, combine the softened cream cheese, condensed milk, pumpkin, salt, the 2 remaining eggs, and the other 2 tsp. of pumpkin pie spice. Whip until well blended. Pour onto the crust.
Bake for 30 minutes, or until set. Cool completely before cutting into bars.
