Pumpkin is a low-calorie high-fiber vegetable which makes it great for jump starting your weight loss journey as well as maintaining a healthy weight. 100 grams of pumpkin (just shy of 1 cup) provides only 26 calories and is free of saturated fats and cholesterol. It is rich in dietary fiber, minerals, vitamins, antioxidants and dietary fiber. The high fiber in pumpkin has been known to control cholesterol levels.
Pumpkin is rich in vitamin A, with over 7,000 mg per 100 g. Vitamin plays an essential role in body function. It is a natural antioxidant, which is essential for healthy skin and mucus membranes, and function of the eyes. The fruit of the pumpkin also provides B-complex vitamins; folates, niacin, vitamin B-6, thiamin and pantethenic acid.
Ingredients:

½ Cup pumpkin puree (chilled)
2 Tbsp agave nectar
½ Tsp ground cinnamon
¼ Tsp ground nutmeg
½ Tsp ground ginger
1 Tsp vanilla extract
1 Cup almond milk (unsweetened, and chilled)
1Cup coconut milk (unsweetened, and chilled)
1 Dollop whipped cream (optional)
Place all ingredients in a blender, pulse for 40 seconds to 1 minute. Serve chilled and enjoy!
