Pumpkin Pineapple Carrot Bread


All it needs is some butter and a cup of hot tea!

I was looking for a new spin on pumpkin bread and I came up with a great one! By adding the moist, tropical pineapple and sweet carrot this will instantly become a family favorite! This is a one bowl wonder which means easy clean up and all of the ingredients are either in your pantry already or just a quick shopping trip to the local Tom Thumb or Kroger. For a fun change you can also substitute baked sweet potatoes in place of the pumpkin.

4 large eggs, lightly beaten
1 t pure vanilla extract
1 t pure almond extract
2 cups pumpkin puree (canned is fine)
1 cup vegetable oil
1 large carrot, grated (stop by the Dallas Farmer’s Market for fresh carrots!)
1/3 cup water
1/3 cup strained crushed pineapple
1/3 cup pineapple juice (strain from canned pineapple)
½ cup raisins
3 ½ cups flour, sifted
2 t baking soda
1 t salt
3 cups white sugar
2 t ground cinnamon
½ t ground cloves
½ t ground allspice
½ t ground nutmeg
Preheat oven to 350 degrees F and prepare 2 loaf pans with non-stick pan spray and set aside. In a large bowl combine all ingredients in the order listed above. Mix well until just combined and evenly divide between loaf pans. Bake on middle rack for 55-60 minutes or until a toothpick inserted into the middle comes out clean.
Allow to cool for ten minutes and then remove bread from pans and allow to cool on a rack for one hour. Keep one loaf to enjoy for breakfast with some tea tomorrow morning and give one to the neighbors. Make friends.

    This looks great! It sounds like it encompasses some of the best parts of carrot cake as well. I made banana bread today, but I would have tried this if I had seen it first.

    Looks delicious! I'll have to give this one a try. I use coconut milk in my pumpkin bread for moistness, but I think the pineapple sounds unique and wonderful.
