
When these bars are baking they give off such a comforting aroma. The house will smell like the Holidays within minutes. After they bake, let them cool for 30 minutes (if you can) and then enjoy!
Spiced Pumpkin Pie Bars
Crust:
- 1/4 cup sugar, heaping
- 5 Tbsp margarine, softened
- 1 cup flour
Filling:
- 2 eggs
- 1 can pumpkin (15 ounces)
- 5 ounces evaporated milk
- 1/2 cup brown sugar
- 1 1/4 tsp pumpkin pie spice
Topping:
- 1/2 cup flour
- 1/2 cup brown sugar, packed
- 1 tsp margarine, melted
Mix all ingredients for crust together in a bowl. Blend with a fork until crumbly.
Press into a non-stick foil lined 9x13 baking dish.
Bake at 350* for 10 minutes.
While crust is baking, prepare filling. In a bowl mix eggs, pumpkin, milk, sugar and spice intil well mixed.
Pour into crust.
Bake for 10 minutes.
While baking prepare topping. Mix together flour and sugar. Add margarine and blend with a fork until crumbly.
After 10 minutes, sprinkle topping over bars and return to oven to bake for 20 more minutes. Bars will bake for 30 minutes total.
These bars are only 4 grams of fat each!
