Pumpkin pancakes, a great way to start a fall day

Surprise your family members with this tasty breakfast treat that will get them in the mood for the fall holiday season. This pumpkin pancake recipe (taken from allrecipes.com) rivals the pumpkin pancakes from IHOP.

2 cups flour

3 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

2 1/2 teaspoons pumpkin pie spice (or 1 teaspoon allspice, 1 teaspoon cinnamon, and 1/2 teaspoon ginger)

1/2 teaspoon salt

1 1/2 cups milk

1 cup pumpkin

1 egg

2 tablespoons vegetable oil

2 tablespoons vinegar

1. In a bowl, mix the milk, pumpkin, egg, oil, and vinegar. In a separate bowl, mix the flour, brown sugar, baking powder, baking soda, and pumpkin pie spice, and salt. Stir the dry ingredients into the pumpkin mixture, just until blended.

2. Heat a griddle or large frying pan until water droplets quickly boil away. Using a 1/4 measuring cup, scoop batter on to the griddle. Batter will be thick. You can use a spoon to spread out the batter, if needed. Do not thin the batter, because it will dilute the pumpkin flavor. Flip the pancake when the surface begins to bubble. Cook until golden brown.
