Here is a simple, no-bake recipe for pumpkin-vanilla flan that was taken from an ad in Woman's Day magazine! This treat is perfect for your Holiday table and only consists of 3 ingredients!
Pumpkin Vanilla Flan
- 1 box (approx. 3 ounces) Royal- Flan with caramel sauce
- 1 cup pumpkin pie mix, from a can
- 1 cup French vanilla coffee creamer, liquid
Place 4, 6 ounce ramekins on a tray.
Follow directions on flan box, substituting 1 cup pumpkin pie mix and 1 cup vanilla creamer for the 2 cups of milk. (You can freeze remaining pie mix from the can for up to 6 months.)
Refrigerate 1 hour or until firm.
To unmold, run a small metal spatula around the edge of each flan, then invert onto serving plates. Shake gently and lift off cups.
Other ideas:
- Substitute eggnog for the creamer.
- Stir 1/4 tsp ground nutmeg before pouring into cups.
- Cut the fat and calories by using 1% milk instead of creamer.
