Protein pancakes for a healthy breakfast

Today we have another breakfast recipe for those who are trying to eat right and stay healthy.

Heather J., a reader from Ft. Myers, sent us a recipe for Low-sugar Protein Pancakes.

Ingredients:

1/2 cup of almond meal

1/2 cup of almond milk

1 egg

2 scoops of vanilla protein powder

Cinnamon

Berries for garnish (optional)

Instructions:

Set a skillet on medium heat.

Mix all the ingredients in a bowl.

Pour the batter into the skillet and flip the pancake over when it starts to bubble.

After about 30 seconds, remove the pancake to a plate. Garnish with berries if you like.

This makes 2 servings of 2 pancakes each. Each serving is approximately 310 calories, 14 grams of carbs and 28 grams of protein.

Other breakfast recipes we have looked at in the past include whole grain waffles and breakfast cookies.
